Stewed apple & coconut cobbler


3 red apples, peeled, cored and sliced

1 cup frozen blueberries (or other berries)

1/2 cup castor sugar

2 tbsp lemon juice

1/4 cup water

1 vanilla bean, split and seeds scraped

1 cup SR flour, sifted

1/4 cup castor sugar

100g unsalted butter

1/2 cup milk

1/4 cup shredded coconut

1/4 cup rolled oats

1 tsp vanilla essence


medium oven proof pan, wooden spoon, small sharp knife, food processor, scraper


Set oven to 180 deg c. 

Place apples, berries, sugar, lemon juice, water and vanilla bean in to a 4 cup capacity oven proof frying pan over medium heat.

Bring to the boil and cook 5 minutes until apples are just firm and liquid syrupy.

Discard vanilla bean and set aside. 

Put flour, sugar, butter in food processor till breadcrumb like.

Gradually add milk and vanilla.

Stir in coconut and oats.

Spoon over apple mixture.

Place in oven and bake 25-30 minutes and serve hot.
