Mum's ginger cake

This recipe is one of Leon's mums favourites that she would cook at Easter. We hope you enjoy!

  • 200g Butter
  • 200g Brown Sugar
  • 200g Flour
  • 200g Wet Ginger
  • 1 Table spoon Ginger Marmalade
  • 4 eggs



  • Preheat oven to 150C
  • Separate the eggs and put the white in the refrigerator
  • Chop ginger to small pieces
  • Wisk the butter till creamy, add sugar and mix till smooth, mix eggs yokes one at the time and add flour bit by bit
  • Add ginger and mix
  • Wisk egg whites and fold through the mixture
  • Butter flat dish and line with bread crumps
  • Add mix to dish and place in oven for about 1 till 1.5 hour depending on the thickness of the cake and test if cooked



Serve the cooled cake cut in smallish pieces.
