Cold cherry soup

This is a delicious cold soup that is perfect for Christmas Day! It may sound a little strange when you first read it but it is always a crowd pleaser at Leons dinner parties!

INGREDIENTS

  • 500g Cherries, remove and keep pips and storks
  • 1 Bottle Riesling
  • 60g Sugar
  • 3 Cinnamon Sticks
  • 2 Lemons
  • 1 or 2 shots of Brandy
  • 1/4l Sour Cream
  • 1/4l Greek yogurt    

METHOD

Crush half the cherry pips. Add crushed pips, storks, bottle of Riesling, sugar, cinnamon, juice of lemons and the peel of one lemon in a bowl bring to the boil and let simmer for 15 minutes. Strain and bring to the boil again add the cherries with the juice and take of the heat straight away. Let get cold add Brandy if required and add cream and yogurt while carefully mixing.

PLATING INSTRUCTIONS

Serve cold with thin toast.
